Pumpkin ukrainian deruny a step by step recipe
Autumn-winter is the perfect time for pumpkin dishes. Firstly, this is one of the few vegetables available in the off-season. Secondly, it is useful because of the high content of protein, amino acids, antioxidants, metabolism acceleration, etc. Thirdly, the price even in a hungry year is one and a half kopecks ten kilos. Another question is that in addition to porridge or traditional baking, we don’t know where to attach a bright vegetable: shifting from shelf to shelf in the refrigerator, as a rule, we immediately send it to the trash, because it has deteriorated.

Pumpkin ukrainian deruny – ingredients for 2-3 servings:
- 500 g pumpkin
- 1 small onion
- 2-3 large garlic cloves
- 1 egg
- 70 g hard cheese
- 2 tbsp. l. flour (you can use semolina)
- Chopped greens (cilantro, parsley, dill together or any kind separately)
- Salt, black pepper
- Vegetable oil for frying

Method:
Step 1. Grate the pumpkin on a coarse grater, slightly squeeze out the excess liquid. Add finely chopped onion, garlic, and herbs. Salt, pepper to taste. Add a raw egg, mix, add flour and cheese. Knead the mass until smooth.
Step 2. Fry the deruny in a pan with a sufficient amount of vegetable oil, spreading with a tablespoon. Cook until golden brown for 3-4 minutes on each side. For thin little deruny, this time is enough.
Step 3. Transfer to a plate lined with paper towels to get rid of excess fat and unnecessary calories. A classic of the genre is to serve a dish with sour cream or a sauce based on it. Traditional Ukrainian deruny are ready. Enjoy your meal!
